CHOÂLESÂTEROL: A fat-like subÂstance that is made by the body and is found natÂuÂrally in aniÂmal foods such as meat, fish, poulÂtry, eggs, and dairy prodÂucts. Foods high in choÂlesÂterol include liver and organ meats, egg yolk, and dairy fats. ChoÂlesÂterol is carÂried in the blood. When choÂlesÂterol levÂels are too high, come off the choÂlesÂterol is deposited on the walls of the blood vesÂsels. Over time, the deposits can build up causÂing the blood vesÂsels to narÂrow and blood flow to decrease.
