BSRM collaborates with Mamie Clafoutis to redefine bakery experience

In partnership with McGill’s Bensadoun School of Retail Management (BSRM) and Master of Management in Retailing (MMR) program, Quebec bakery Mamie Clafoutis transformed its St. Denis location into a cutting-edge bakery. Guided by McGill experts Saibal Ray, AJung Moon, and James Clark, the retail tech proficiency of Leav, and leveraging insights from student Mehdi Ghazvinizadeh MMR’25, the project integrated innovative technology while preserving the brand's personal touch. The hybrid model blended automation with human interaction to address customer pain points and operational inefficiencies. Leveraging their experience with contactless retail such as the Retail Innovation Lab partnership with Alimentation Couche-Tard, experts understood both the advantages and limitations of full automation. The success of this collaboration earned the bakery the “Coup de Coeur” award for digital transformation at the 2024 Salon MPAs.
