Professor Ariel Fenster, PhD'73, on the history of wine as well as the chemical aspects of fermentation and aging. Lecture includes an introduction to the "science" of wine appreciation, with particular reference to understanding of wine labels, and examines recent studies suggesting that moderate wine consumption is beneficial to health.
